Eric the Trainer helps Sorority Forever star Annemarie Pazmino learn how to plan healthy lunches, snacks and dinner.

Herb Grilled Salmon:
Ingredients:
• 5oz. Salmon Filet
• 1tsp. Fresh Dill (chopped)
• 1tsp. Fresh Parsley (chopped)
• 1tsp. Fresh basil (chopped)
• Lemon Pepper
• 1 Lemon Wedge
• Olive Oil
1.) Season the salmon with the lemon pepper on both sides.
2.) Place the salmon on the grill and cook for 1 minute.
3.) Rotate the salmon 45 degrees and cook for another minute.
4.) Place the salmon on an oven-safe dish and top with the fresh herbs.
5.) Coat with a little more olive oil and place in the oven for 5 minutes or until done.
6.) Serve with a lemon wedge.
Grilled Stuffed Zucchini Rolls:
Ingredients:
• 1 Zucchini (cut into strips ¼ inch thick)
• ¾ cup Goat cheese
• 2tbsp. Parsley (chopped)
• 2tbsp. Basil (chopped)
• 1tbsp. Lemon juice
• Salt and Pepper
• Olive Oil
1.) Brush the zucchini with olive oil, salt, and pepper.
2.) Grill till tender.
3.) Combine goat cheese, parsley, lemon juice, and basil.
4.) Form goat cheese mixture into a ball and roll the zucchini around it.
5.) Serve
Pesto Chicken Wrap:
Ingredients:
• 1 Chicken breast (butterflied)
• 4oz. Pesto
• 2oz. Parmesan cheese (shredded)
• ¼cup Arugula
• 2oz. Bell pepper (red/roasted)
• 2oz. Tomato (diced)
• 2oz. Basil (chopped)
• 1 Tortilla (preferably whole wheat)
• 4pcs. Cucumber (julienne)
1.) Season chicken with lemon pepper and brush with pesto
2.) Bake till done then cut into thin strips
3.) Place arugula on tortilla
4.) Place chicken on top of arugula then sprinkle with parmesan cheese
5.) Top with the rest of the ingredients
6.) Roll and plate
7.) Serve with a side of pesto ranch
